Made from hearty buckwheat kernels, slowly roasted to bring out the wonderful, earthy flavor of buckwheat. Kasha has been around for more than a thousand years and is one of the earliest known--and one of the most common dishes in Slavic Eastern Europe. Kasha is very simple to prepare and can be ready to eat in just minutes.
Buckwheat is one of the best sources of protein in the plant kingdom. Buckwheat is not a grass, though it is treated like a cereal crop. The outer husk is pulled away and the grain-like fruit is harvested and eaten. Buckwheat is very highly nutritional, making it popular in many nations across the globe. Its high fiber content keeps the digestive system healthy and helps slow down the rate of glucose absorption, which makes it a healthy option for those with diabetes. It is also high in manganese, magnesium, copper, and zinc, which are all great for the immune system. It also contains all eight essential amino acids.
Try it as a delicious hot porridge or pilaf. Kasha can also be added to soups and casseroles for a nutritious boost.
To Prepare as a hot cereal: Bring 3 cups milk or 2 1/2 cups water to a boil. Stir in 1/2 cup of Kasha, salt and butter to taste. Boil 10-12 minutes, stirring occasionally. Serve warm.
