Tangy, aromatic classic red chili sauce is even better with rich notes of cocoa, smoked paprika and the pleasantly warm heat of ancho pepper. A better, bolder sauce for simmering cheese, beef or chicken enchiladas.
Directions: While preheating oven to 400 degrees, wrap 8 corn tortillas in foil and warm in oven for 5 minutes. Place 2 tbsp. Monterrey Jack or Cheddar cheese in each tortilla, roll up and place seam-side down in baking dish. Cover with Simmer Sauce and sprinkle with additional cheese, cover dish with foil and bake for 12 minutes or until heated through. Remove foil and bake 5 minutes more.
