Baking Extracts & Flavors

An extract is a concentrated solution that contains the alcohol-soluble flavors found in the product being extracted. Ethyl Alcohol is the typical agent used to pull the flavors from the plant. The extract solution used to pull these essences from the plant. 

To be called an extract, it must contain at least 35% alcohol by volume. Extracts can be very potent.

A natural flavor is usually a ready-to-use, standard dilution of a concentrated natural extract or blend. Sometimes flavorings incorporate additional material in their formulation as well as the extracted material (such as in coconut flavor). The flavors we offer are all alcohol free. Because of the dilution, natural flavors are generally less concentrated than pure extracts.
