Molasses is the dark byproduct of the multi-step boiling process that refines cane sugar into table sugar.
The first and second set of boilings produce a sweet sugary molasses often used in baking bread and cookies. This is Golden Molasses.
The molasses can then be boiled again until the sucrose is crystallized, leaving a thick, robust flavored molasses called Blackstrap Molasses. Blackstrap molasses is the most healthful molasses as most of the sugar has been processed out but the nutrients and minerals all still remain.
