Whole grain oats are steamed to make them soft and pliable, and then pressed between rollers and dried. Rolled oats then re-absorb water and cook faster than whole oat groats or steel-cut oats.
Thick oats are the slowest cooking of rolled oats, but they retain more of their individual texture.
